Preparation time: 10 minutes
Servings: 2-6 side dishes
Ingredients:
- 1 loaf Italian (or French) bread
- 2-6 cloves garlic (More might be overkill; less and it really isn't garlic bread anymore, is it?)
- 1/2-1 cup mayonnaise (Enough to spread the mixture over all the bread)
- 1/2-1 cup (equal amount as mayonnaise) Parmesan cheese (grated)
- 1/4 cup or so olive oil
- A pinch or two of salt
- Parsley or basil - chopped - for garnish
Directions:
(0) If your broiler that takes a while to heat up, turn it on now.
(1) Mince, or crush, the garlic in a medium bowl. Add a pinch of salt & use the back of a spoon to mush it up real good. (It should look like a thick paste.)
(2) Add the mayo & the cheese. Mix.
(3) Slice the bread in half, horizontally.
(4) Brush olive oil over the cut surface of the bread.
(5) Put the bread on a cookie sheet, and place under the broiler for about 1 (one) minute or until starting to brown. Remove.
(6) Spread the Cheese mixture over the bread. (It may be wise to wait a minute until the bread cools enough for you to handle it.)
(7) Put the bread bach under the broiler for another minute, until the the cheese starts to bubble and get nicely brown. Remove.
(8) Cut the bread, top with garnish if you want, and serve.
