Thai Basil Chicken (Gai Pad Kra Pao)

Ingredients:

  • 6 legs chicken
  • 7 large cloves garlic
  • 1 bunch of fresh basil (Thai holy basil if available)
  • small green chili peppers
  • 1-2 TB vegetable oil
  • fish sauce/nam plaa

Directions:

Remove the chicken meat from the bones and cut into small, even pieces.

Stir fry the garlic and pepper in the oil. When garlic begins to brown, add the chicken. Stir fry until the chicken is about half-done. Add the basil and fish sauce, stir fry for 1-2 minutes longer.
