Making Cranberry Napoleons

ONE Preheat oven to 350°. Cream butter and sugar until light. Blend in vanilla, salt, and egg. Stir in flour.

TWO Drop batter by tablespoons onto ungreased sheet pans. With a small knife, spread in 3" rounds.

THREE Bake 10–13 minutes, until golden. Transfer while hot to a cooling rack. Store airtight until ready to serve.

FOUR For the sauce, simmer all ingredients just until berries pop. Strain; reduce until thick (about 15 minutess).

FIVE Blend filling ingredients just to soft peaks—don’t overmix! Transfer to piping bag with star tip.

SIX Prepare sugared cranberries. To assemble, anchor a cookie on plate with a little filling.

SEVEN Just before serving, pipe 5 rosettes on a cookie. Add some berries; top with another cookie. You'll make 3 tiers.

EIGHT Spoon sauce around the base of napoleon. Garnish with berries and mint. Serve immediately.
