Chinese Rice Cake

Ingredients:

  •     1 lb sweet rice flour
  •     1 1/2 c sugar
  •     2 tsp baking powder
  •     1 c vegetable oil
  •     4 medium eggs
  •     1 can coconut milk or 1 1/2 c regular milk
  •     1 can red bean paste
  •     1 cup walnuts

 

Directions:

Preheat oven to 350. Mix all ingredients (except for bean paste and walnuts) together until smooth. Pour half of the mixture into a 9"x11" pan and bake for 10 min. Then spread red bean paste into pan and cover with the rest of the mixture and walnuts. Return to oven for another 10-15 minutes. Cut into squares when cool.
